Here is something handy I do
I just put in lots of chicken breasts..can be still frozen
in the crock pot and put some seasonings...whatever you want like lemon pepper or jalepeno juice (if it is for spicy something)
then I let it cook 6-8 hours

Sometimes I add water to the pot for a bit of moisture

when it is done it will shred itself, you jsut have to pull it apart with a fork

Then, I put them in meal sized portions in baggies and freeze them. When I make a chicken dish I already have it cooked. Just have to throw it in...for chicken enchiladas, chicken and noodles, chicken pot pie, chicken tacos, chicken tortilla soup, ...anyhow you get the idea.

Totally true. I can't remember the last time I used thawed chicken for anything. LOL

I just tossed all this into my crockpot for supper tonight a few minutes ago. Done prepping in less than five minutes. Super quick! I think later before we eat I'm going to stir in some peperjack cheese I have in the fridge so it melts.

I love crock pot recipes - so easy - and this spicy chicken sounds delicious! I've never put frozen chicken in a crockpot - does it turn out the same???

both recipes sound delicious. mmmmmm. Stichingrandma, do you serve it over rice or noodles? I made tuna casserole the other night(in a hurry meal), and used the spicy pepper jack cheese soup instead of mushroom soup, ohhhh was it good and spicy.

Yep, turns out just great. I also use a Nesco cooker and can toss a 14 lb frozen turkey in there and cook it in about 3-4 hours and it's totally done. As it thaws enough I do remove the giblets from the inside though. Obviously I don't take an ice pick while it's frozen to remove those. :p I dont' do that very often but I have more than once.

Nope, I just make loaded mashed potatoes to go with that and didn't thicken that sauce. It's not a great sauce for gravy making but I did drizzle a bit over the chicken. I'm not super crazy about the recipe but my husband loved it. It's good just not my favorite.

We need more recipes here. I love cooking when I'm not actually cooking and we end up with a great meal.

Another of our favorites.
Trying something here with the font because these are posting very strange for me. They are NOT that huge on my computer and it should be coming through a size 12 font Times New Roman but they aren't. :(

I changed this one to a Times New Roman - size 10 so we'll see how it comes up when I hit post because right now (before posting) it looks right.

Actually, it's Christina but I go by Christie. I get called Christine, Kristin, Chris, etc. I answer to most anything ;)

I can't wait to try some of those recipes. I actually did a porkloin Tuesday night in the crockpot so I do use it. I like recipes with little prep and if I can put things in frozen... even better.

I have 3 friends that are fun to keep up with and I or my husband will always mix their names up at times. One is named Christina and the other is named Christine and Christine's husbands name is Chris. Talk about confusing. LOL

I know you are looking for crockpot but if you haven't seen this thread for the soups yet, this is a recipe I posted there and it's super quick to make and THE best soup I've had in a very long time. It's one my husband made all kinds of comments on and he doesn't normally make too much of a fuss over the stuff I make other than to say he likes it or not. This one he wouldn't stop saying how good it was. I was afraid we were going to fight over the last of this stuff. LOL

I do the same thing as the top post, but I add home made BBQ sauce. Let it cook until the chicken shereads. Then we put the BBQ chicken on buns. It is really good.

I just got this recipe a few days ago and it looks pretty good.

Crockpot Orange Honey Chicken

6 Chicken breasts halves (boneless,skinless,frozen)
1/2 cup Orange juice
1/2 cup Chicken broth
1/4 cup Honey
1 tablespoon Dry mustard
1 tablespoon Teryiaki sauce
1 cup Broccoli florets
1 cup Cauliflower florets
1 cup Carrot "pennies" (sliced)

Place frozen breasts in crockpot. Mix juice, broth, honey, dry mustard
and teryiaki sauce. Pour over chicken in crock. Cook on low for four
hours.

Add vegetables about one hour before serving. Place on TOP of
chicken and do not stir. Cook the additional hour and serve over rice.

Yield: 6 servings.
If using non-frozen chicken breasts, you should SUBTRACT at least one
hour from cooking time.

YUM! I love the recipes with the frozen chicken. It is great to not have to wait for the chicken to thaw.

I NEVER thaw stuff unless it's a super thick cut of meat, but chicken especially works great. At the grocery store we shop at I buy these chicken breast pieces that are something similar to a strip but less "formed" and not breaded. I LOVE those things because I can toss them into a pan and simmer or even fry in olive oil and they are cooked, ready to eat within about 8-10 minutes. They are great to use in a lot of stuff and super quick.
