I recently got this recipe from one of the yahoo groups. I cannot recall which one OR who posted this but I made it last night and have to tell you that you MUST TRY THIS! It's SOOOOOOOOOOOO good. I told my husband at supper that he's lucky dessert even got made because I tasted the first part while mixing the cream cheese, sugar, and vanilla and was in heaven at that point. LOL I told him I could have gone back to my desk and computer and eaten that entire bowl and not bothered to even make the rest. But, I am SO glad that I did because the finished product is just as addicting. What's even better is how fast it goes together. Waiting by the oven to finish baking is an entirely different matter. :D Of course, then I had to look at it while I was making supper and keep my fingers out of the pan.
Sopapilla Cheesecake
Great served cold.
Unbelievable served warm with vanilla ice cream!
Ingredients
2-8 oz. packages cream cheese (softened)
1-1/2 cups sugar, divided
1 teaspoon vanilla
2 cans of crescent rolls (the ones in the roll you have to peel the paper off and pop open)
1 stick REAL butter (melted)
1 teaspoon cinnamon
Directions
Preheat oven to 365 degrees.
Beat cream cheese, 3/4 cup sugar and 1 teaspoon vanilla with mixer until smooth.
Spray bottom of 9x13 pan.
Put one can of crescent rolls on bottom of pan.
Spread cream cheese mixture over crescent rolls.
Put another can of crescent rolls over mixture.
Melt 1 stick real butter.
Add 3/4 cup sugar and 1 teaspoon ground cinnamon to melted butter and stir well.
Pour over the top of crescent rolls.
Bake uncovered 25-30 minutes.
Remove from oven and attempt to allow it to cool and run with the entire pan to a place no one in the family can see and eat the ENTIRE PAN YOURSELF! :D (Ok that last part wasn't on the actual recipe. It was my addition. ;)

The pan has been SCREAMING my name all day long. I keep going in and telling it to be quiet though. I only hope there will be enough willpower for me to ignore it until after supper again tonight.
I did have to break down and have a piece with coffee this morning though. :D It's unbelievably good and it sure doesn't hurt that it takes about five minutes to mix, get into the pan and baking in the oven.

That was my favorite part, other than eating this stuff was how quickly it was to get ready for the oven. I normally don't like baked cheesecakes either but this one is to die for and still creamy and very good after baking not thick like a NY Cheesecake. Your kids will love this stuff Jami IF you can manage to save any for them. :D

Don't come looking for me if you become addicted to this. :D Mine is already gone so I might have to stock up on the ingredients for the next time I have a craving. My son looked at the last piece tonight and I told him he'd better eat that now because if not it WILL be my breakfast in the morning so this is his last chance. It very quickly left that pan because he knew I wasn't kidding. LOL

I was already sleeping by the time you answered again last night. :p I was finding it hard to keep my eyes open. I was up at 3am yesterday and that was nearing 11pm so I was wiped out.

If your kids are anywhere around I sure would. This is really a great dessert and relatively cheap too in my opinion BUT, it only makes a 9x13 size pan full. :D

I started again in Jan but could not afford it any more and gained it back (stress)
I really want to go back but we will see...... I CAN"T NOW Because guess what I just took out of my OVEN!!???????
I just made a half of this cheesecake.... oh Vicki... I should have made a 9 x 13 instead of an 8 x 8... my girl came upstairs and said what smells soooooooo good? And then my hubby said the same thing. I could not hide it just for myself!

:eek: DAWN! You halved the recipe? Did you not READ all of my post and how I raved about this stuff?????????? WHY would you cut it in half? HA Silly girl. That will be gone tonight. LOL I was right though wasn't I? REALLY quick to mix and get into the oven right?
I've been craving that stuff again and need to get to the store for those ingredients. :D

I know why she halved it. So she wouldn't eat twice as much. Duh! ;) I play that same trick on myself. Like ordering a full hamburger from my favorite hamburger joint and throwing half away before I even start eating it...half the calories gone bye, bye! Please don't chastise me for throwing money down the drain. A good burger is worth it! :D

:eek: Ok, I'll resist. I can say though that if you were in downtown Chicago you could just give that other half to the bum who is standing there asking you if you are going to eat it all. :D
NO! I am not kidding. When we went to Chicago a few years ago for a get together for another online community I used to belong to and moderate we had that happen in a downtown Burger King we stopped at for a drink and a quick burger. I was shocked.

ok.. Tonight I made a 9 x 13 pan of it and its almost gone and when it gets cold it will be gone by midnight I bet!

You're welcome. I bought stuff to make more today while getting groceries. Too bad the shopping trip wiped me out and I can't stand now to make it tonight. :( OH well. I guess I'll have to eat the grapes I bought tonight.

Oh Elaine ~ you don't need to wait for that meal. Just stop at the store tomorrow and get those ingredients. Trust me, this goes with ANY meal. Heck, this CAN be the meal. roflmao :D Ok maybe not really THE meal but it's very good. My husband doesn't like cheesecake that much and ate this stuff.

C'mon, Dawn, I thought you would have learned by now that you have to hide your portions in order to eat them later. I do that all the time with my treats. I'll make a batch of brownies and then cut a few and stash them in a secret hiding spot from my children. Although, they are getting pretty good at sniffing them out.

Thank You! It was WONDERFUL but I think I gained back the few pounds I have lost. I made two copies, one for my dd who is a teacher. She said it would also be great to take to her scrapbooking class. I will definitly make it again and again!

You are welcome Elaine. I am still in awe at how easy/fast this recipe it to make and wish I would have been the one to create it. Oh well, I can surely make it over and over again even if I didn't come up with the idea right? I think I'll be making it this weekend. I've had the stuff in the house for two more of them for the past four days now and still haven't broken down and made another yet.

Welcome to the site Stacy. Pillsbury Crescent Rolls would be similar in flakiness to a Croissant BUT, this is something that you buy in a tube and it must be cooked. The link below is to the page so you can see some other things you can make using them and what the dough looks like once it's cooked.

I think if you can't buy that product there, the closest uncooked item you could probably substitute would be frozen puff pastry. It might be a little puffier but the topping being butter and sugar might help to hold that down a little bit. Can you buy frozen puff pastry there that you must cook before eating?

Great news. Glad you all liked it. That's the type of recipe you don't mind getting requests for though since it's relatively cheap and SO quick to make too. But it's SOOOOOOOOO addicting.
