I slept in this morning because we have nothing really to do today. I made hash brown casserole which is one of our favorites and later today we'll have porterhouse steaks we got on a great special and baked potatoes. Tonight we're having a new recipe I found for a Loaded baked potato pizza which looks very good and my Chicken fajita pizza with some snacks I..... well that hubby made after I was too sore to do anymore last night.

Tomorrow is the big day in our house when all the boys and our granddaughter will arrive. (Crossing my fingers on hubby's son because he was supposed to come today and we got an email that he's back home now as he had to turn back when his wipers stopped working) Given our weather this week with sleet, freezing rain, drizzle, snow, and then last night when we went to bed...... a thunderstorm  he definitely needs those wipers. We are even under a flood warning today because of all the rain. This IS Northern IL where we should have tons of snow with freezing temps. Oh joy, looked out the window and see it's just started raining again. :(

The menu tomorrow is yummy and I have TWO turkeys because the store had something new which is a fully cooked Deep Fried Cajun turkey that we just have to toss into the oven for two hours to cook and then my huge turkey (23lbs) that I always have and lots of other goodies. We have done all we can ahead of time so that we are not spending the entire day in the kitchen. I want to play with my granddaughter tomorrow. I've printed out coloring pages for her to color on and she's got tons of presents we got for her. Yep, we spoil her rotten when we can.

Anyway, I hope everyone stays safe today and through the rest of the holidays, especially New Years Eve. Back to the kitchen for me now so I can finish up the make-ahead recipes for tomorrow.

Vicki - Hope your Christmas with your family was great!

I just had my husband and 2 daughters today. My husband's son and girlfriend arrive tomorrow if weather permits. We are supposed to get over 6 hours of freezing rain. HMMMMMMM. We had smoked beef tenderloin with roasted shallot and bacon and port sauce. It is my signature dish. It was accompanied by roasted garlic mashed potatoes with green beans with crispy garlic and lemon. We had smoked salmon appetizers and assorted baking for dessert. We are all ready to fall asleep now.

Hope you all had a wonderful day. It's time for a movie now. Merry Christmas to all. I'm really tired!!!

Thanks Susan. We are doing our Christmas tomorrow(Sat) so today was just relaxing and preparing a few more of the recipes for tomorrow. Plus I finally wrapped all the gifts today which were many more than I remembered. :D Our granddaughter is going to be very spoiled as are our grandpuppies.

We are having the regular turkey, a deep fried cajun turkey, stuffing, make ahead mashed potatoes which everyone loved at Thanksgiving and I loved because they cooked in the crockpot and there was no last minute messing around making those, plus we have 7 layer salad, that good old green bean casserole, sweet potatoes, corn casserole, stuffing of course, and gravy plus I made Marinaed Mushrooms which I have to hide from one of my boys. I made two pumpkin pies, a peach pie, white bark with dried cranberries, chopped pretzels and chopped oreos, and a few other things.

In the morning we're having cinnamon rolls and a Danish Kringle my aunt sends us each year. Then Sunday morning is my famous biscuits and gravy before hubby's son takes off to go back home to MI.

I hope everyone had a great Christmas or whatever holiday you do celebrate.

Next up .......... a brand new and hopefully MUCH better New Year.

Your meal just brought memories of my Grandmother back because she used to make Yorkshire pudding for us but I always thought that was cooked underneath a beef roast where the drippings went into it as the roast cooked. Am I crazy? She also made probably about 25 or more Christmas puddings and tons of the brandy (Or was it rum sauce?) sauce for them as gifts each Christmas. I remember as a child not liking that stuff very much though. She and my Grandfather were from England and we still have relatives that live in London and also Ipswich, Suffolk.

She died way back in 1972 on Christmas morning so she's been gone a long time now. That was probably my worst Christmas ever as one could imagine. I was a teenager and had not gone the night before with the rest of my family to the nursing home to see her because I had twisted my ankle that day and I knew the doctor had given her permission to leave the nursing home and come to our house for Christmas. I have never forgiven myself for that. :(

I have heard stories of yorkshire puddings being cooked like that, but I have never tried it like that, its brandy in the christmas pudding, brandy butter is rather nice on Christmas puddind and mince pies.

Janet,

Is the Brandy Butter you mentioned the same as hard sauce? Here we mix butter, icing sugar (confectioners sugar) and brandy to make a firm consistency. and it melts into the hot pudding, I haven't made it for a couple of years now as I'm the only one that ever seems to eat it. My mouth is watering at the thought of it.

We had turkey, roast potatoes, roast parsnips, runner beans, sweet corn, sprouts and stuffing for our Christmas dinner. Followed by a cheesecake or trifle with fresh cream. I didn't have turkey myself though as I am now vegetarian. I also had vegetable gravy, whereas the others had turkey gravy.

Today it was cold turkey, cold gammon, mashed potaotes and salad with pickles. I actually prefer this meal to the hot roast on Christmas Day. Again, I never had the meat like everyone else but I thoroughly enjoyed my meal. We had chocolate log for pudding.

I can't imagine being somewhere hot for Christmas! Although I think I would quite like it:D

Janet,

I have been cooking Christmas dinner for the past 10 years for my extended family and have made Yorkshire Pudding for each of them...we all love it! This year we had 12 for dinner and no one left the table hungry! I made mushroom tarts for an appetizer; dinner was Standing Rib Roast, Yorkshire Pudding, mashed potatoes, roasted carrots & parsnips, steamed asparagus and fruit compote. For dessert I made a trifle and Christmas cookies. One of our friends brought a homemade chocolate liquer that was the best way to finish a great meal.

It is so nice to hear what everyone else had as their Christmas dinner!
