Share your recipes please

So those in other countries can share in the recipes being posted and they can also share some of theirs, below are a few sites to use for converting to metric and visa versa.

2 boneless, skinless chicke breasts, sliced into small pieces
2 tsp cajun seasoning
2 T butter
1 green bell pepper, chopped
1/2 red bell pepper, chopped
4 fresh mushrooms, sliced
1 green onion, minced
1 1/2 cups heavy cream
1/4 tsp lemon pepper
1/4 tsp salt
1/8 tsp garlic powder
1/8 tsp ground black pepper
2 T parmesan cheese
Linguine pasta
1. Start your water for pasta and cook as directed.
2. Place chicken and cajun seasoning in a bowl, toss to coat.
3. In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5-7 minutes. Add peppers, mushrooms and onions; cook for 2-3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper and heat through.
4. In a large bowl, toss pasta with sauce. Sprinkle with parmesan cheese.
Once you make this a few times, you know what you can substitute to your likes or dislikes. I hardly ever use the green onions. I just use regular onions. I also hardly ever use the red bell peppers. It's just easier to use all green peppers. I also don't always have linguine pasta in the cabinet. I have used regular spaghetti.
I make this once or month or so. It is dh's favorite!

Anyone have any recipes or ideas? I have found just bone in chicken recipes. It can't be anything too outlandish. Remember, it is just me and the kids. They like it simple.

Good stuff and the kids might like this one. If you were to want to double this recipe, be careful at doubling the dressing portion as it gets overpowering and just could become trash rather than supper. HA! ASK me how I know that. :D

Creamy Italian Chicken

4 boneless skinless chicken breasts cut in half
1/4 c. water
1 pkg. dry Italian dressing mix
1 pkg (8oz) cream cheese
1 can Campbell’s cream of chicken soup

place chicken in crock pot. Mix water and dressing mix and pour over chicken. Cook on high for 3 hours. Combine cream cheese and soup until smooth. Pour over chicken and cook on low for 30 minutes. Serve over hot cooked rice or noodles

Phew. Sorry, that's not my only recipe. We just had an interruption where I had to call 911 for the cops to come here. :eek: All is fine now thankfully and I can get back to checking recipes. Sooooo off I go again. Back in a bit.

Crock pot Sour Cream Salsa Chicken

4 skinless boneless chicken breast halves
1 package reduced-sodium taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream

Spray the crock pot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours. When ready to serve, remove the chicken from the pot. Place about 2 Tablespoons cornstarch in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

Per Serving: 170 Calories; 2g Fat; 28g Protein; 9g Carbohydrate; 1g Dietary Fiber; 70mg Cholesterol; 403mg Sodium.

This one I simmered the chicken breasts in some chicken stock to cook before putting this together. It only takes about five minutes but you can also cook them quickly in the microwave too if you wanted to. I liked the stock adding the extra moisture though personally.

I just made this for the first time a few weeks ago. We liked it but didn't LOVE it ya know. I need to make it again just to be sure we weren't just having one of those days where we were really hungry for steak and this is what I cooked instead. LOL

Crockpot Cheesy Chicken and Potatoes
By Sylvia Waldsmith

½ pound cooked chicken, cubed or shredded*
1 package frozen French Fries (32 ounces)
2 cups shredded Sharp Cheddar Cheese**
1 can condensed Cream of Chicken Soup (do not dilute)
1 can condensed Cheddar Cheese Soup (do not dilute)
1 small onion, finely chopped
4 tablespoons butter, melted
½ teaspoon salt
¼ teaspoon ground black pepper
Tabasco to taste

Mix chicken, frozen potatoes and shredded cheese in crockpot.

Mix soups, onion, butter, salt, pepper and Tabasco in bowl, and pour over mixture in crockpot.

Heat on low setting for 8 to 10 hours.
Serves 6.
*use turkey, ham or canned chicken
**use any cheese you like

Sweet and Spicy DUMP Chicken

1 Package Taco Seasoning Mix
8 oz Apricot Jam
12 oz Salsa
1 1/2 Pounds Chicken Pieces

For immediate cooking: Pre-heat oven to 350 F. Place all ingredients into a large baking dish, turn chicken to coat. Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
To thaw and cook: Take the bag out of the freezer the night before, make sure the baggie is completely closed. Place the Bag on a shelf furthest from the freezer (It works best if the bag is laying flat, although this may not be the best option with a side-by-side fridge/freezer). Preheat the oven to 350 F. Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

For the crockpot: Put chicken in the bottom of the pot, pour over the remaining ingredients (mixed) and cook until the chicken is done! SIMPLE!

Swiss Chicken Casserole

6 chicken breasts, boneless and skinless
6 slices Swiss cheese
1 can cream of mushroom soup
1/4 cup milk
2 cups stuffing mix
1/2 cup butter or margarine, melted

Lightly grease crockpot or spray with cooking spray. Place chicken breasts in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter over stuffing mix.

Cook on low 8 to 10 hours or high 4 to 6 hours.Serves 6.

From another sewing group. Ok, ok, not chicken but the kids might like this.

Pizza in the Crockpot

1 1/2 lb. browned hamburger
2/3 box rigatoni noodles, cooked
2 (16 oz) bags mozzarella cheese, shredded
1 sm can mushrooms !
1 small onion, chopped
2 cans pizza sauce
1 (4 oz) pkg pepperoni

Alternate in crockpot in order given to make 3 layers. Cook 5 hours on
low.

SLOW COOKED SHREDDED BEEF TACOS
Tacos de Rez Deshebrada

This is a great dish for those that like to prepare dinner in advance. Just throw the beef and onion in a slow cooker with our tasty seasoning mix and some later, and don’t touch it for 6-8 hours! When you return, you’ll be minutes away from
a delectable taco dinner.

Yield: 6 servings

1 to 1 1/2 pounds beef chuck roast
1 medium onion, sliced
1 cup water
1 package (1.25 ounces) ORTEGA® Taco Seasoning Mix
1 bottle (16 ounces) ORTEGA® Thick & Smooth Taco Sauce
1 cup (7-ounce can) ORTEGA® Chopped Green Chiles
1 package (12) ORTEGA® Taco Shells
Toppings: shredded lettuce, chopped tomato, SARGENTO® ChefStyle Shredded Mild Cheddar Cheese, sour cream

PLACE beef and onion in slow cooker. Combine water and seasoning mix in small bowl. Pour over beef and onion. Cook on LOW for 6 to 8 hours or until tender. Remove meat to cutting board; shred beef with two forks. Place beef in large bowl. Stir in taco sauce and chiles.

FILL warmed taco shells with beef mixture. Top with lettuce, tomato, cheese and sour cream.

That is why I love you sooo much! Thank you for posting all the recipes. I just got a new and bigger crock pot for Christmas and want to get back into crock pot cooking. I hate wasting time on recipes unless they have been tried out by someone else. I'm going to copy all the ones you gave me and try one or two a week.

I have 4900 recipes on my computer and thousands more off. I own roughly 200+ cookbooks and that's not counting my magazines I've collected over the years and the thousands of recipes on cards that I haven't taken and transferred to the computer. Then there's two large boxes of newspaper clipped recipes in the back room. I'm kinda known for my cooking knowledge and recipes and everyone calls me for help. lol

I know you will love the larger one. I have about four crockpots and two of those are the 6 quart ones, the other two are the 5 quart. Then I have two 6 quart Nescos and 2 18 quart Nescos. We just bought two new Nescos, one in each size. I haven't decided what I want to do with the other two yet. I think if I wanted to I could cook an entire banquet and never turn my oven on. LOL

I have other crockpot recipes but you asked for chicken although I had to toss in a few others.

Yea, well the 911 call turned to something a bit more embarrassing this time and I looked more like a freak is why I'm so casual sounding. roflmao We have had two instances of vandalism since July and both were my sewing room window and slightly off to the side of the window. We are fairly sure they are from my ex husband who is a bit upset with me. Not my problem though that the State is chasing him for child support. HE was the one that chose to ignore his responsibilities since 1990 and they finally caught up with him about five years ago. The idiot owes me over $30,000 and that's only because the state adds interest onto the amount. Five years ago when this started and he did pay some each year he only owed about $24,000. HA!

Anyway, this time ...... sounded like someone had a very large something and they took it next to my window and ran it from there all the way down the side of the house scraping the siding. It was very loud so I had the cops come out since my fearless husband went running out there to check it out. He came back as I was still talking to the operator to let me know we had a HUGE ice dam slide off of about 1/4 of the roof, down the drain pipes, hitting the house the entire way down. HA! oops. I guess we're safe now ms. 911 operator. nevermind. Well, they still had to send two squads out to be sure since the call was made and by law the must check it out. Yea, the cops had a nice chuckle. Pfft. whatever. LOL

Wow, VickiT, I'm sure that was a bad fright for you. I had an ex like that -I aways calling the police, finally I just moved away...never got the 43,000.00 he owed. Now his life is empty and my is full and wonderful with my three grown kids, one granddaughter, a great step daughterw/hubby, and the greatest husband in the world. Sure hope your ex decides to straighen his act out...but sorta doubt he will, most of them don't.
I'm glad it was a false alarm, be careful with all the snow up there. I enjoyed the low temperatures for a few days - summers back, today 76 maybe higher.

From pale, pale light pink glow to a nice strong golden wheat. A lot of change, oh well off the the market to get my paint and tape so it will be a long day.

It was and especially since it's outside the room I'm in almost all day long - my sewing room. It really scares me to think someone has been watching to know which room I'm in the days I don't have my curtains closed ya know. Paranoia, yes? LOL Ok 'nuff of that depressing stuff and on to recipe talk.

Snow? HA! What's that? We have lovely green...oops...... brown yards up this way again. The snow completely all melted in the past two days which is why the ice came sliding down and right now it's 48 degrees outside. YAY! Tomorrow it is supposed to be even warmer and then the bottom falls again. It IS January in Northern Illinois so it's to be expected ya know. :p

Thanks. Ooooooooh painting; how fun. :p Golden wheat sounds like a nice "glowing" color. I had a hard time choosing color for my sewing room because I wanted purple but liked something similar to the color name you mentioned. I ended up chickening out on purple and toned that down to something looking more of a bluish purple.

Anyway ~ Enjoy the recipes. I have plenty more.

Oh dear, Vicki...I will NEVER lose those pounds if you keep posting these yummy sounding dishes. I've done some of the dump recipes before and really liked having them in the freezer for in a pinch. And with going back to school tomorrow, the crockpot will start getting a workout again.

64 degrees here today, snow all gone, and people out running in shorts and tanks. Long range looks like above freezing most of this week. I'll take it in January, you bet!

We have areas here under flood watches which is amazing for a January. They normally won't be under those until about March and April. VERY strange and Chicago and our areas are looking at rain tomorrow with some of them possibly being severe. :eek: Checking calendar..........YUP it IS January. http://terpstra.us/images/vickiljt/Gifs/Attitudes/faint.gif OH and currently the temperature is 51 degrees!

The crock pot recipes look good. I need to figure out how to print this thread...or maybe just cut and paste into something else (I know how to do that ; ) )

HA! Nope, my kids are all grown now and out of the house. My youngest, one of twins actually, is in his 4th year of college and could move back home if he can't get financing for the next years of law school. I guess we'll see what happens with that.

What you can do is just go to "File" and then "Print" but that will waste a lot of ink since it will print everything you see on the page. The easiest is to highlight the recipes you want to have, one at a time, and then paste them into word, or notepad, or whatever you have simlar to that and then save them that way, or print them.

pssstt... i got two ex's also. *d... i'm dense. took me a while to learn how to do it! my main one, husband of my wondeful beautiful son which makes it worthwhile, was whacko from vietnam (he finally mellowed down after remarrying... altho seth still kind of iffy. ) anyway.. my ex tried to run me off a very windy country road. my parents lived in a house they built "in the woods". i knew the road so well altho it was really a danger to most drivers. even though he had raced cars for a short time i stil was able to outrun him cause i'm such a darn good driver. or was... they won't let me go out and endanger the public anymore. and that was one of my favorite things. oh well.

came from such a moral and honest family i thot bad guys would wear signs. 'dude i'm *bad*'. maybe they just don't know. maybe. don't think they wanted to be like that.

this is a kind of wandering... hope i'm not in trouble for sending this post. kill it if needed. i can deal with that kind of violence. :viking:

chicken pot pie
It is 2 deep dish pie crusts..
preheat 400
bake the bottom crust as you are preparing the filling...make it golden brown

need:
garlic cloves or powder to taste
1 can diced potatoes (or boil and dice 1 1/2 cup)
1 bag of mixed frozen veggies
1 can of cream of chicken soup
1 cup of chicken broth
1 1/2 tblspoon flour
2 c cubed chicken (I put 2 chx breasts in crock pot and cook and then shred the chicken instead of cubing it)
2 tbl of parsley
1/2 teaspoon basil
1/2 teaspoon thyme
salt and pepper

2 deep dish crusts (this will make 2 pies so you can get 4 crusts and make both or fillone and freeze the leftover filling for another time)

put it all together and cook until warm
pour into browned crust
put crust on top
bake 25 min or until top is done

You can change the seasonings and I just kinda dump veggies in until it isnt super liquidy,
You cant really mess it up.

I found this the other day and tried it today for lunch and as soon as I ate it I knew I had to come here and post this AWESOME recipe!

The sauce is extremely versatile. Try subing pork, shrimp, or scallops for the chicken in this recipe.

1lb chicken, cubed
2 TBS corn starch
1/3 cup water
1/4 cup rice vinegar
1/4 cup sugar
3TBS Ketchup
2TBS Soy sauce
1 TBS canola oil
1 TBS minced, peeled, fresh ginger (i did not have any so I omitted)
2 garlic cloves minced
1 green bell pepper seeded diced (again,,omitted)
1 can pineapple chunks drained

Combine chicken and 1 TBS corn starch. Toss well, set aside. Combine remaining corn starch, water, vinegar, sugar, ketchup, and soy sauce, set aside.
Heat non stick wok or deep skillet over med-high heat until drop of water sizzles. Add oil, then add chicken. Stir fry until almost cooked through. Add ginger and garlic. Stir-fry until fragrant, about 30 seconds. Add bell pepper and pineapple, Stir-fry until tender-crisp, about 3 mins. Add vinegar mixture and cook, stirring until mixture boils and thickens and chicken is cooked through.


After that I put it over brown rice....It is so good. Plus it is a weight watchers recipe..so 1 serving is only 6 points!
