My kids love the lemon loaf recipe from Starbucks. I have tried to duplicate it. While I think my attempts have been delicious, my critics have not been impressed.

I love that stuff. the secret to that though I think would be the glaze because that has more lemon flavor than the loaf itself. That's nothing more than powdered sugar and lemon juice I'm sure and then put onto the loaf when it comes out of the oven.

At one point he gave this recipe away. You could go to the library and get his cookbooks and I bet you'd find that in one of them.

Anyone have the recipe for key lime pound cake? I had some recently and fell in love. It has such a tart flavor until one small slice is not enough. Would appreciate if someone could help on this one?

It's not a pound cake, but is a key lime cake. Maybe this will hold off your cravings. :p


Key Lime Cake

CAKE:
1 package Duncan Hines lemon supreme cake mix
1/2 cup water
1/2cup Key Lime juice
1 3oz package lime Jell-O
1/2 cup vegetable oil
4 eggs.....slightly beaten

FROSTING:
1/4 pound butter....softened
1 8oz package of cream cheese....softened
1 tsp vanilla extract
1 1lb box confectioners suger
1-2tbsp of milk

Using an electric mixer, blend ingredients together until well combined, about 3 minutes. Pour into a greased (9 x 13 x2) pan. Bake for 45 minutes or until toothpick inserted comes out dry. Do not over bake , because the cake will be dry. (You can also use 2 - 9inch round layer pans instead of the sheet pan so it will fit in the refrigerator easier and so there is more frosting per slice.)

To prepare the frosting, use an electric mixer to combine the butter, cream cheese, vanilla. confectioners sugar and milk. Blend until smooth and creamy, then add milk to reach desired consistency. Ice sheet cake or layer cake as you would any other cake.

You have done it again, Thank you for saving my week. My daughter ask for the recipe and I told her someone would know of it. You are one remarkable lady, you really have the answers and I am so thankful. So glad I joined the site, all the ladies are special and really good people (as my husband says) but you, you always save the day. Again, "THANKS".:flowers:

You're welcome. Hopefully that one will work. It's not a pound cake, but I sure think it's going to have the taste you're looking for. I had NO idea I even had that but I've got so many recipes that I always need to check. Cooking/baking is what I'm known for by anyone that knows me. :D Good luck. This sounds like an awesome summer recipe! I love lemon/lime anything. My girlfriend loves key lime pie, so I think I will pass this on to her. Thanks!

OH Yes it is. YEP! YOU CAN MAKE IT! LOL

Of course, you could use applesauce in the cake mix instead of the oil and then use sugar-free jello and then use a light cream cheese in the frosting and that would cut those (non-existant hehe) calories even more. ;)

I haven't tried using applesauce in lieu of oil... does it come out the same?

I have used applesauce before in cakes and it worked fine. Obviously not in any type of sponge cakes or angel food but regular mixes. I also used a product they make for fat replacements which is made from plums. BUT, because that stuff is really (or used to be) expensive I used baby food plums or even prunes because that was essentially the same thing. The applesauce though I used in cake mixes more and yes, it worked great.

The plum or prune being used to replace the fats was something I used more in other baked things like brownies and cookies.

I second what Vicki says - Weight Watchers has a lot of recipes where they recommend applesauce in lieu of butter...I hear it works great!

ccdoster - don't diet so hard that you burn yourself out! Everything in moderation! Enjoy something really good every once in a while!

I have NOO will power and it used to be that I would just exercise a lot and eat what I wanted. Well, I don't get to exercise as often anymore ... I've since had children and am now in my *ahem* later 30's so now I have to try to have a little will power.

I'm a little scared into it too since I had gestational diabetes with kid #2. I have to keep my weight down so I don't develop Type 2 diabetes. I could stand to lose 15 lbs or so. Not a whole lot but when you have no will power....:rolleyes:

Oh what I'd do if I only had to lose 15 lbs or so. That's what I get for being predisposed to being heavy. I found my birthmother about 7 yrs ago and got the answer as to why I've always been overweight. She's over 400lbs. I hope I don't reach that ever but it sure answers questions I've always had.

I have NO willpower either. I'm very bad. And that goes for eating, cooking, shopping, and I suppose anything.
