View Full Version : Butternut squash soup recipe?

Does anyone have a butternut squash soup recipe (chicken stock based w/pureed squash) that is slightly sweet? I've found several recipes but none have the slight sweetness I found in the soup at a restaurant. I've craved it ever since!

Ellen, Here is an old recipe from my grandmother. Maybe this will work.
Butternut Squash Soup
1 butternut squash, peeled
Nutmeg
2 TBSP Butter
Salt & Pepper
1 Onion, Finely Chopped
2 - 4 Tbsp Syrup
6 cups Chicken Stock

Cut squash into 1-inch chunks. In large pot melt butter. Add onion and saute until tranlucent (about 5-7 minutes). Add squash and stock. Bring to a simmer and cook until squash is tender. Remove squash chunks and place in blender and puree. Return pureed squash to pot. Stir in nutmeg, syrup, salt and pepper. Serve warm.

Yummmm! Over Christmas break, we had a squash bisque at The Corner Bakery in Chicago that was sweetish and had interesting spices. This sounds like a good place to start in trying to come close to that one. Thanks for the recipe. I happen to have a butternut squash here, and with the horrendous weather coming, making soup sounds like a nice break from stitching!
